
My son is coming home from college for Thanksgiving and the whole family is filled with anticipation. Thanksgiving is his favorite holiday and we’re all really looking forward to making his first trip home from school a great event. We’ve asked him to give us ideas for what he’d like on the menu the week that he’ll be home but the one thing we don’t have to ask him is what he wants for “Turkey Day”, or rather TOFURKEY DAY!
If bird is the word than our word is Tofurkey! It’s delicious and compassionate and it is the center piece of our feast. The thing is that we can’t go with just one Tofurkey because this bird is more like a Cornish Game Hen then a Turkey in terms of size, so we prep at least three to feed our family and our guests. Now in addition to Tofurkey we have all the usual trimmings:
- Corn
- Peas
- Mashed Potatoes
- Mushroom Gravy (made with Baby Portabella Mushrooms)
- Roasted Garlic and Rosemary Sweet Potatoes
- Brussels Sprouts and Cranberries
- Homemade Rolls
- Cranberry Jelly
We usually have Hot Apple Cider as well as a delicious drink made of 1/2 Cranberry Juice and 1/2 Ginger Ale.
For desert we’ll prepare home made Pumpkin Bread, Apple Pie and Vegan Pumpkin Pie (my personal favorite). Both can be topped with Soy Delicious Purely Vanilla “Ice Cream”.
